Strawberry Panna Cotta


1 Vanilla pod
300 G Cream
300 ML Milk
75 G Sugar
3 Sheet white gelatin
500 G Strawberries
1 EL Honey
Juice from 1/2 lemon

Cut vanilla pod in half lengthwise, scrape out pith. Simmer the pulp, vanilla pod, cream, milk and sugar over low heat for 15 minutes.

Meanwhile, soak gelatin in cold water for 5 minutes.

Remove vanilla pod. Stir squeezed gelatin into hot cream mixture and chill.
step 4
Wash strawberries, puree with honey and lemon juice. As soon as the cream mixture begins to gel, fold in 2/3 of the strawberry puree.

Pour cream into a bowl or several glasses and chill for at least 2 hours.
step 6
Spread remaining strawberry puree on top of cream.

It also goes very well to prepare in advance, because in the evening I distribute the cream in the jars and before serving the next day I add the puree just on top.
