Mix mascarpone, quark, milk, sugar and vanilla sugar to a smooth cream.
Cover the bottom of a baking dish with the ladyfingers and drizzle them with apple juice.
Put a layer of applesauce on top, as well as a layer of the cream.
Layer the ingredients on top of each other until all ingredients are used. Make sure that the last layer is cream.
Finally, sprinkle with the cinnamon and sugar mixture to taste.
Refrigerate the tiramisu for at least 4 hours.
